This Imperial Stout was aged 12 months in a Woodford Reserve barrel and then an additional 7 months in Pips Meadery Raspberry Prestige barrel. After aging, we conditioned the beer on marshmallows rounding out the ripe raspberry flavor.

On tap at Fidens Brewing Company in Albany, NY.
This one pours a very dark black color, with a very small head, and no lacing.
This smells like creamy milk chocolate, raspberry truffles, marshmallow fluff, oak, and caramel.
There’s just a whole lot of raspberry character to this, and it’s crazy how it only came from the barrel. It’s jammy, but not ridiculously fruity by any means. It’s like raspberry cordial inside of a milk chocolate candy. There’s a bit of fluffy and creamy marshmallow, vanilla, oak, and tons of milk chocolate.
This is silky, creamy, velvety, and full bodied, with no real booziness.
This is easily one of the more unique barrel aged stouts I’ve had from these guys. The Pips barrel just added so many interesting dimensions to this.
