This Imperial Stout was brewed with a complex grain bill and extended boil time. Aged in Willet Family Estate bourbon barrels for 30 months before packaging. This adjunct free stout is our expression of dark beer and oak in its most basic form. A silky, oily body meets dark fruit, vanilla, and brownies.

Poured cellar cold to a Mortalis mini snifter. Color is deep ebony. No head, no visible carbonation, virtually still. Absolutely viscous and stains the glass. Legs barely slide down. Aroma is fragrant stone fruit, some leather, and a developing ester I can’t quite place.
Initial flavor is a dark almost semi-sweet molasses base that is cut by a slice of the Willett Estate bourbon. It has a strong stone fruit quality, which I think is a result of it being on the cold side and needing to aerate longer. This is a massively heavy mouthfeel, oily and coating. Lingering aftertaste for minutes. Alcohol (13% ABV) brings almost instant warmth.
Definitely one to sip, leaving a good amount of time between to let it fully open up its profile. 30 minutes might be a reasonable time to just let it breathe before you jump in.
