a 100% brett fermented saison type with pears, and a heck of an ambitious brew for a new operation just getting off the ground. unfortunately, it sort of tastes like a new brewery, rather than what i had in my head when i saw it on the menu. its pale and a little still from the tap, hazy straw colored with a patchy white layer of fast receding head. it smells a little stinky, like the brett is just getting going, really lacks a dry mature funk i like in brett beers, and is immediately disappointing for that reason. the beer isnt bad though, the unique green pear skin flavor is awesome, really true to the fruit, not perfumy at all, and quite natural to the pear, balanced in the flavor not overdone in the least. it needs more carbonation too, but the body is there. i also like it being kind of malty, i can really taste the raw wheat. it seems just juvenile, and like with a little more time for the brett to work it would be really special. i wish they would have waited on this one until it got a little closer to that point, but it offers a solid reason to be optimistic about these guys moving forward...
