this is a cool beer, a cedar aged ipa, i have only ever seen one of these from cigar city. the beer is amber in color, well darker than anticipated for an ipa, but i like what all the malt adds. it has a light sweetness and caramel character, and a neat baked heartiness to it. the cedar is pretty subtle, which is my main knock against this one, for something so interesting to be so minimal is frustrating, i want to taste so much more of it than i do here, but i like what is there of the fragrant wood. it makes it unique and rich without being overbearing. the hops need to be ramped up to rightly call this an ipa though, they are balancing bitterness and thats about it, maybe a bit of a dry hopped nose to it, but there isnt nearly enough hop flavor in here for it to be what it says it is. still, its a well made beer and something a little different which i really like. next time they brew it i would advocate for a lot more of the cedar and quite a bit more hops all the way around. nice to see some clever beers on their menu though, along with the coffee one this was my favorite when we visited.
