a grisette style, cool to see from these guys, not enough innovation from them this summer, at least thats anywhere outside of the brewery, so i was pumped to see this. love the style. its, as i feared, pretty standard on the yeast side, a french belgian type, clean, hot, estery, simple, with a little white wine and white pepper nuance to it but not all that interesting really, was hoping for more rustic fermentation character, more funk, but thats okay, its drying and it works well with the grain in here. sturdy wheat base it seems, some rye malt likely, i get a little earthy bite in it, and plenty of body, cereal forward, fresh, some minerals, and a while grain vibe, like hull and husk and all that, kind of nutty in that way. its not as light to drink as i thought it might be, fuller feeling despite excellent carbonation from the tap, its hearty, even autumnal, unexpectedly robust in that way, but im pretty into it. it loves spicy food, incorporates a neat organic sort of earthy grain base with some high tone yeast phenols, and finishes with clean vinous and citrusy pep. somewhat unexciting in terms of the ferment, but a solid american type take on the style overall, the execution is solid. good to see something new from these guys!

12oz can from Boise Co-op. Hazy yellow / golden pour with a half finger foamy head. Yeasty aroma, soft cheese, sourdough. Taste is yeasty, buttery, savory. Really nice mouthfeel with a soft finish. Nice!
