i gather from the name that this is the beginning of something, perhaps a journey to make unique high quality saison, and as a first go, which this appears to be, its pretty solid, although both somewhat generic to me on the fermentation profile, not shocking, and perhaps unnecessarily strong for the style, but its balanced, obviously wheat based and earthy and grounded in that respect, and seems to have a lot of the technical details under control, although it lacks the personality i am in love with in the best examples of these types of beers, for sure. looks like a wheat beer, very light haze, muted glow, short white head from the tap at their second location, bubbly enough to drink, not heavy but with some body, not messy despite some starch to it, maybe some raw unmalted wheat in the mix as well, a fine foundation for this, perhaps a touch of rye in here too, i get trace spiciness in both aroma and flavor, but it could be a wrinkle of the yeast. it is the esters of the ferment that lead the sensory experience, not warm enough to be phenolic and gummy and stuff, but relatively high tone, green apple, honey, white pepper, coriander, white wine, to me familiar notes of commercially propagated french type saison yeast, clean enough to sort of drink like a belgian golden, if not for the graininess, which i guess could be called rustic, but that would be generous i think. warms to light citrus, grassy hops, and a light soapy element, cohesive though, on the dry side, and certainly more than passable for what it is, but it also has me eager for saison 2 and beyond. not enough american breweries taking saison seriously, so this is a project that i have a lot of love for. i was impressed with the diversity in here, these guys have come quite a ways over the last handful of years...
