Kolsch is a style similar to lagers, but brewed with an ale yeast at warm temperatures and then conditioned in colder temperatures. Our Kolsch is brewed with a specialty malt from the Cologne region of Germany, along with a generous amount of malted wheat. The Cologne malt gives it a pleasant golden yellow color. To put our own spin on a traditional Kolsch, we decided to raise the ABV up a notch and add a mixture of US, German and Czech hops to give it a unique flavorand aroma.

they were calling their kolsch fox's fire kolsch when i was in, and the abv was at 5.5%, this must change a little from batch to batch, but i assume they arent making more than one kolsch consistently, it must be the same beer, added without the name, or with the name attached to the beer later on, either way, it was an unimpressive beer, the least drinkable of the beers i had in here when all i wanted was a nice light pounder. when it was first poured and real cold it was fine, but with some temperature it gets real weird on the fermentation, past estery to phenolic, oddly sweaty and cheesy too, which is not part of what i want in a kolsch, and the whole beer is almost totally flat, they just missed the mark with this. it tastes like frozen peas and socks and chemicals, and i really didnt like it. im sad these guys arent able to keep the doors open, but this beer would alienate me if i lived here, like im not sure how often i would go back to give them second and third chances. i liked their other stuff pretty well, but this isnt good. if fox's fire kolsch is different than this nameless one, somebody let me know.
