Taken from a recipe from Northern German, dating back to at least the 16th century at very low temperatures to minimize color formation. It can be made from combinations of barley and wheat, with the stipulation that the malts are kilned lactic acid, a prerequisite that creates the lactic acid taste, a distinguishing feature of Berlin. This sour is nice and tart, light salted in the traditional German fashion.
