this is absolutely stunning, procured at a natural wine shop in boise i should have known about a long time ago, decently priced for what it is i suppose, and worth every penny. its done with grapefruit, pink salt, and coriander, sort of a funky wild gose, low alcohol, wheat and pils malt based it seems, and very minimal overall, but delicate and refreshing and with expert attention to detail, i love these guys so much, and this is among my all time favorites of theirs! super pale, whitewashed looking pale yellow color, a lighter shade of its label tone, high rising almost champagne action head, then receding to a fizzy half inch, just a little cloudy. the nose is awesome, minerals from the salt, light lemon and lactic tang from the ferment, a mild wit peppery yeasty element too, maybe a french saison type ester, cool complex yeast profile anyway, and then the nutty earthy coriander with the more sweet than acidic grapefruit, essential oily and balancing the earthy wheat malt, so subtle yet complex. it also smells sort of hoppy, melon and lemongrass, the salt makes everything pop. the flavor is so good too, clean lemon, starchy but light and tidy grain, raw a little, so pale and dry, minerals everywhere even the iron of the pink salt, and a zesty juicy honest grapefruit, no doubt real fruit here, subtle coriander but its there, medium tang, even a slightly bretty funk too as it warms, all the while effervescent, light bodied, and super refreshing. i could have pounded the whole large format bottle myself, but was happy to share it with new beer friends too. special stuff from a special brewery, widly unique and masterfully executed. wow.
