Can dated Feb:
A white top of about 1/4 of the glass with some rockiness forming as it falls, but the weight wins out fairly quickly, leaving a spider web of lacing over the barely hazed white gold body. There is a honey and lightly floral sweetness on the nose at first, though soon enough some summer grass and lemony citrus joins in.
The taste starts with a dry herb focaccia-like breads, with a bit more grassy/herbal bitterness than the nose led me to expect. There is a honey sweetness underneath this bitterness that presents in every sip after the first. A noble hop grassy bitter beer, but not out of balance, at all. Accents include a slight floral note with the honey up front, and a little Saaz-like spiciness that trickles into the mid-late palate on others. An off-dry feel with a softness despite a medium/medium-plus level of carbonation.

The pour is quite nice very light pale and crystal clear, sudsy head develops then collapses to leave some film and thicker islands, a few spots of soapy looking lace.
A very pleasant and aromatic nose, its cracker like and very zippy, some lemon, followed by fresh spring time air, both lightly floral and herb like, honey like bite.
The taste is great; cracker like with some light bread character, hops become slightly more grassy on the tongue and leaves a hint of lingering spiceyness, they light woodsy character to me...a lot going on but well balanced.
Light body, biting but smooth carbonation, light touch of pale malt sweetness greets the tongue before being cut clean off by a grassy bitterness that lingers on the back of the tongue and leaves a nice drying sensation...very clean, zero off flavors.

(12 oz can, 'MudHen Pils', no date/code, but from a fresh six-pack I received at the brewery... poured into my tall Tonewood lager glass)
L: brilliantly-clear, straw-gold liquid; good two-finger high head builds, but it's a little open and loose in its structure, degrading relatively quick
S: dense white bread crust, like a baguette; spicy herbal hop top note, subtly floral bottom note with perhaps some dried citrus peel highlighting... superb freshness and vibrancy, not to mention very expressive in its malts
T: broad breadiness greets the palate floor with a tidal wave of spicy right behind it, washing over it, sizzling with spice, finishing out with some peppery grass and crackery grain in the aftertaste... bread crust and spicy grass in rich concert
F: delicately lush roll of resin-dusted round malts, the bitter cut slicing that off in its low-lit, powdery finish... light lingering frictive warmth... fairly cut dry; most of the latent tingles are on the palate roof, while the tongue and jowls feel relatively unscathed... nice bit of back end carbonation sparkles... would prefer this to be a touch more light and dry, but I am drinking it around cellar temp...
O: no idea what y'all are tasting, but this is pretty stellar; enjoyed a tall glass at the brewery yesterday before picking up the cans... the brewer did mention that the quality has improved as of late once they installed a spunding valve, so who knows, maybe this is one of the more recent batches... most happy to share and savor the rest of the sixer (2009)

Poured from tap at the brewery and also enjoyed in cans to go.
L: Light golden color with nice carbonation and a fluffy white head. Nice lacing.
S: Grassy, earthy, bready and a little green.
T: Pure pilsner. German style with really nice bitterness and a nice bready malt body. Full flavored for a pilsner and the finish is all hoppy bitterness. This is a really nice pilsner
F: Bitter, dry and oh so drinkable.
O: I'm a pilsner guy coming from Pennsylvania where we have a ton of great pilsners. This one can stand next to some of the great ones and for me seems to be getting better every year. No doubt this is more full flavored and bitter than some would like, but for me it's a total winner.

T: Pure pilsner. German style with really nice bitterness and a nice bready malt body. Full flavored for a pilsner and the finish is all hoppy bitterness. This is a really nice pilsner

Do like pilsner but this one wS a bit too earthy unrefined for me. Maybe this is directed at a different genre of German pilsner but for me the was well outside of normal taste profile for this style
