etre gourmet score, a mixed culture type saison in white wine barrels, done with fantome yeast apparently, which is what sold it to me, very cool. my first from these guys, but most certainly not my last, this is really fantastic stuff. a deep golden to just short of brass colored brew, clearish and sparkling with a high rising bottle conditioned looking head, peaky and airy and lasting. aroma here is light bretty funk, super mature and bone dry, light cereal grain complexion, tannins from oak wine barrels, peachy and limey fruitiness from the wine too, some acidity contributing to a mouthwatering sensation, straw and grass, minerals, old wood, lightly spicy belgian type yeast notes, but more funky than familiar. the flavor is great too, cool how delicate this is for being barrel aged, its spirited and excited. the wine is as bold as the yeast in this, the grain being so light and all, the fruity side is so compatible, and the acid makes the brett pop. its hard to envision this as a fantome yeast, without the green glass and all, but i can get elements of that as it warms, some horsey weirdness, rustic for sure, but this seems sort of patient and careful at the same time. really well made beer, drinkable as they come, the kind of saison i love to drink, and i could have done the whole large bottle to my head. ill look for more from this brewery, a great first impression here. mouthfeel is as good as the flavor, subtly distinctive, herbal, even bitter at times but super cohesive. loved it!
