incredibly unique beer, ambitious and well executed, in collaboration with a mexican operation called escollo, new to me, i loved this one, maybe my favorite from our visit, up there with the poblano pils anyway. a mexican dark lager type with some smoked malt and agave syrup in it, wildly interesting! medium amber color on this, no darker, slightly cloudy, sudsy tan head on it a half inch high and lasting. the aroma is crazy, campfire smoke, black pepper, old dried out driftwood, minerals, kilned malt richness, dehydrated red apple, good mezcal, and light molasses sweetness, really a bold nose, fills half the bar, intriguing as they come, nothing harsh from the smoke even though its robust, still balanced. the flavor is great, the smoke is actually carried all through this by malt sweetness, and its a unique smoke, less intense than it smells but long running, its earthy and even kind of spicy, and with the agave it very much has a mezcal vibe, love the back end on this where the grain is at its fullest and the sweet agave kicks in. slightly herbal to me, toasted and bready, minimal from the lager yeast and this ends up a little rich to drink, but overall really clever and good, even memorable. i love how inspired the beers are in here, the space is great, and we had a fantastic time with their adventurous lineup. recommended!
