We took our Grisette recipe and sessioned it down to an easy 3.9% abv and fermented on a new yeast strain harvested from cacoa beans in MaraƱon Canyon, Peru.

Pours a foggy pear color with a finger of white foam that retains a lengthy amount of time. Aroma is very night nutty, toasty, bready malts that dance and play with cocoa and soft yeast esters. Flavor profile follows suit, hitting mellow malt notes of nutty, toasty, bready, biscuity and fine notes of cocoa and very light yeast esters. There is a delicate pear quality right at the finale. It's soft jazz all the way through, dancing and working the palate through a tune without ever hitting a big hook. Mouth feel is soft and delicate with a pillowy after taste. It has a thin consistency. Overall, a delicate, sessionable saison that not only delivers the quintessential saison notes, but also folds and fits in a bit of odd novelty all the while maintaining balance.
