sick to get to drink a few from these guys in close proximity, both rare and expensive, but in this instance its worth the price, really nice little saison here, complex and super funky and fermentation forward, a really splendid beer, highly drinkable, just weird enough to seem exotic, cool to be this complex and apparently not done in oak, if it is, its awfully mild, but this remains somehow steely and bright despite being funky and wild to me. the pour is lovely, really light and pale yellow color, springy and excited under a full inch plus of white puffy head with great retention, its hazy but not messy, very bubbly, and gentle and pretty looking in the glass, shared a couple of ways. the nose is tangy and a little bacterial, lemon curd and almost a brine-like mineral composition to it, subtle bretty character to me, a light belgian ester hitting a coriander note, trace champagne to me in this, white grapey like that and crisper than it looks like it could be, both new and also mature, hints of elderflower and pear, tart cider, raw too like there is unmalted wheat in here, crazy interesting, unlike anything ive had. the flavor follows, bacterial but not real sour, it cuts off before it gets too strong, a lemonade note to it, neat with the light funk in here, dry and fast at the end, pushed on by high speed bottle conditioned seeming carbonation. white wine for sure, dried flowers but that could be the label playing tricks, trace vanilla, goldenrod, and honeydew. the funk is unique, not quite bretty, not quite lambic-esque, but distinctive for sure and moving in that direction. the grain is mellow but lovely, soft and pillowy in feel even with some acid to this, earthy and uncooked, gorgeous. overall a subtle but very complex beer with a lot of personality, fully effervescent, drinkable and fun, a good one to share with new friends, a treat to drink beer from these guys, always unexpected liquid in these bottles, and folks are right to be excited about them!
