epic beer, i am shocked this doesnt have higher scores here on BA. they call it a rustic wheat ale blended with an oak fermented mead made from peach blossom honey, so cool! i love these guys, and i love that they are canning now, their can conditioning seems excellent too, this is super frothy headed, micro size bubbles. some light opacity to this, pale wheat colored though, looks simple and elegant, maybe some pils malt in the mix, it smells definitely agricultural, earthy, and cereal based, nice and dry but also fresh, could be some raw wheat too. the nose is incredible, and the flavor is right there with it, nice funky brett, a wild side thats more subtle than in some of their other beers, but not less mature, just less bacterial, no real acidity to this hardly at all, very delicate overall, but distinctly farmy, really neat on the ferment, and bone dry. this fermentation profile is amazing with the honey, which is front and center here too, very floral and springy, peony, elderflower, green apple, orange blossom, and indeed some stone fruit, yellow peach, white peach, dried apricot, dried mango, impressively dynamic, they got an absolute ton of character out of the honey, again really farmy and pasture-esque, yet the beer is so dry too, all this honey flavor, no honey sweetness, maybe a product of blending in the mead rather than raw unfermented honey, probably retains more character that way, i am impressed. you wouldnt expect oak to play a huge role in a beer this soft and delicate, but it really adds a lot, newish, white wine notes, soft vanilla, somehow like grassy and green still, in the best way, aromatic more than flavorful i suppose, and adding a little structure with the wheat. i love how efferescent this is, the way the honey is so distinctive and up front, and how funky the brett is on the back end, i absolutely adored this. world class, and one of the more unique honey beers i can recall ever drinking. not to be missed!
