Barrel Aged and Fermented Imperial Stout Aged 2 Years and One Month in a Buffalo Trace Lot D Barrel.

Yes you read correct we chose one select barrel from our barrel library. This barrel unlike other barrels really stood out during a panel tasting. What I mean by this is, the flavors aromatics and everything about this beer represent what we would like to accomplish with our barrel program (when possible) here at Eighth State. Finding a barrel that sticks out so perfectly is less common than one might think, but truly is worth it when you find it.

This barrel specifically eludes to rich notes of Toffee and Caramel, touched by a smoothed mellow heat. As one continues to drink, expressive notes of Baker's Chocolate, Madagascar Vanilla, Caramel drizzle, and touches of savory toasted coconut melt together in unison to create one of our favorite beers to date.

Please serve at least 54 Degrees, but closer to room temperature to truly experience this Stout in the proper manner.

Poured at fridge temp at about 4 years old. Pours completely still and super viscous. Color is motor oil black. The nose is super intense. So much bourbon! Burnt toffee, vanilla, molasses, dark chocolate, some really nice dark fruit.

The taste is crazy and intense. Not sure how this tasted fresh, but this has an amazing bourbon taste on it. This is accompanied by sherry, chocolate, vanilla, cherries, raisins, toffee candy, brown sugar, and raspberries.

The mouthfeel is pretty heavy. The aftertaste is actually quite fruity and sweet. Overall, I think this was probably a lot better when fresh, but still really good.

No bottling date (released on 12/24/2020, so presumably bottled within a few days of that date); consumed on 2/6/2022

Pours an immense black void of liquid, viscous as it crawls to the glass with no hope for any head to manifest; time does not favors, as neither cap, collar, nor any shreds of lacing (beyond the threat of inky legs) form against the walls of the glass; an ominous-looking brew.

Aroma opens with subtle threads of raisins and plums, intensifying as it warms and guiding into a dusting of cacao meeting sinewy barrel and more decadent waves of caramel through the middle; charry toffee peaks with edges of molasses cutting a ripe booziness into the back end of the bouquet as esters of bourbon vanillins linger.

Taste starts off with notes of silky, rich chocolate glowing with caramel drizzle and an underlying toffee brittle; soft oak edges burnt sugar into chocolate batter as a fresh raisin compote with savory umami becomes cleverly interwoven over the mid-palate, soon finding plummy esters and softer bakers chocolate on the back end while lingering sensations of oatmeal raisin cookie dough fade past the finish.

Mouthfeel provides a massive, nearly chewy body, almost entirely still while presenting a slick, creamy glide and a shrewd undertone of barrel char persistent; inky and mouth-coating past the mid-palate, textures remain consistent into a cumulative umami twang scraping through the finish, forming a unique alignment with semi-sticky, moderate warmth as it fades to the swallow.

The exploratory structure presented here in part reimagines the barrel-aged stout concept, reducing sensory distractions endeavoring toward the darkest absolutes of the style and producing an enigmatic liquidation of malt richness coated in heavy barrel in the process; an essential aberration toward the purest kind of decadence.
