another immaculate specimen in this impressive wasted loaf series where they use old bread to brew with. this one is called levain, but im not sure what that really means, if its a grain or a kind of bread, but the beer is awesome, fermented entirely with their house sourdough culture instead of ale yeast. i didnt know that was this alcohol tolerant, so thats pretty neat, not sure i have seen this done before quite this way, and the beer overall is a gem, unique and subtle and great. it got some real funkiness to it, but it thoroughly bready too, not a brett or bacterial funk at all, but it is in the ferment, dried apricot and white wine in small parts, some rising dough, toasted bread from the malt, extremely earthy, really cohesive and good, seems more refined and dialed in than others ive had from these guys, they seem to be improving quality from batch to batch as the recipes stay unique! not real hops in here, but they arent missing, this has plenty going on, wheaty, baked tasting, and oddly dry, super dynamic, and the yeast doesnt produce any appreciable sourness in this, even though its a sourdough strain. i am extremely impressed with this, killer recipe, killer idea, killer execution. this is perhaps the best beer i have had from these guys to date, like nothing i have ever tasted before. this series is so sweet!
