Notes via stream of consciousness: This saison is brewed with locally grown barley and an ancient grain called emmer. It’s poured a clear light gold body with a little bit of a brass colored sheen to it. The head rose up quickly, fluffy and white, but then dropped back almost as quickly. The aroma is unusual with something that I can’t quite describe, but which must be coming from the emmer. It’s slightly phenolic, floral, fruity with pear and apple, mildly grassy, and it also has a light suggestion of acidity. The flavor bears these things out with an added touch of peach and nectarine, and underlying non-specific citrus. It’s lightly sweet, lightly acidic, and moderately bitter. The fruits come and go, seemingly haphazardly, but I always end up with more of a nectarine or apricot note than pear or peach or apple although I guess at the same time they’re also there to some extent. It’s a semi-dry finish with the bitterness fighting against the residual sweetness of the malt and the slowly fading fruit notes. It’s slightly grassy as well. In the mouth it’s medium bodied and zesty. Apart from the unusual phenolic note it’s slightly astringent, which is distracting, but otherwise it’s quite charming. I give it credit for originality as well. To note, once the head fell there was no lacing left behind.
