€5,20/,33cl brown glass bottle coded “Mindestens haltbar bis: 03.03.23” and sampled on 22.09.21

Notes: This is brewed in conjunction with Wilder Wald, and is labeled as a Heu Saison. Hazy deep gold body teeming with lively bubbles rising beneath a short cap of dense white foam. The head retention is excellent but the lacing is limited to large splashes and medium to large spots in between. The aroma displays a rich graininess with wheat and something else - whatever “heu” is, unless it’s actually hay (which it can’t be as you can’t malt hay). My guess is it’s spelt as it seems to have the same characteristics. It’s earthy, a little fruity, somewhat like wet straw, and a little leathery due to the use of Brettanomyces in the ferment. Apart from a delicate spiciness from the saison yeast it seems to be all Brettanomyces. Not surprisingly, that follows into the flavor and it’s interesting as these are the kinds of ingredients farmers would have been using to make their saison biers. It’s not acidic but there’s a slight edge to it, nor is it really that bitter either, but it finishes dry and earthy with some orchard fruits and a delicate spiciness lingering. In the mouth it’s medium bodied and highly effervescent but not biting. Quite unique, really well done, and really, really nice!
