Fantôme d'Or with old man bush salt leaves foraged from Wildflowers' owner's farm (collaboration with Fantome).
$12 AUD per small pour.
Dried orange peel. Lively Brettanomyces funkiness. Dried tangerine bits. Clove spice. Biscuity Belgian saccharomyces. Mild acidity. Spelt. Rustic barnyard flavour...pepper, old apple skin, salt, faint brine. Doughy yeast.
Complex yet balanced, in classic Fantome fashion. Soft, perfectly carbonated, smooth, wet, medium-bodied.
A lively Belgian Saison like only Fantome can make, but I confess I can't pick out Wildflower's ingredient/contribution at all. When the beer is this good, who did what in a collaboration doesn't really matter.
