a very solid take on the style and my first from these guys, who appear to be associated with some higher learning, which is rad, great to see formalized beer education, if i was a student i would be all over this! looking it up on their website it might be called "brews'ed nanner" and was perhaps someones final project, which again is just so cool, but it was just presented as "dunkelweizen" when i had it, so sticking with that here. amber to brownish colored with a puffy off white head crowning it, good carbonation, and a traditional nose of overripe banana, german malts, dry cocoa, molasses, and subtle clove type spice, really compelling and fermentation forward, recognizable because its brewed to style quite well, and this immediately seems professional and good to me. the flavor does have that old world yeast, banana and earthiness to it, really nice, high toned but not phenolic, and this is toasty and nutty at its core, chestnut, maple, hazelnut, even possible peanut or that little red skin between the shell and the nut, molasses again without being too sweet, but it is a touch caramelized to me, frothed up from the wheat that its built on, this is very properly done, and it warms up nicely, hints of toffee and vanilla on the rich side, dry soil and dark bread too. the body is fuller and this feels fluffy without being dense, nicely carbonated and with a pleasant aftertaste, lightly roasty and bitter at the very end, bitter cocoa there. a really solid effort here, has me curious to try more of their stuff, this is very faithfully done, impressive.
