a clean, tidy, and easy drinking take on the style, to me very minimal on the yeast side, not that its not fermentation forward a bit, but that its not the familiar banana and clove complex, it seems almost more american wheat than hefeweizen, perhaps fermented quite a bit cooler, i get the wheat in its full glory well ahead of any yeast in both aroma and flavor, but i think that lends to drinkability, i enjoyed this quite well even if it was a little bit unexpectedly restrained. pale blonde in color with a little body evident and an almost inch of white cream head that lasts the full drink. the aroma is a little less dynamic than the flavor but they are similar, earthy pale wheat malt with light peppery spiciness and nice mineral character throughout, slightly toasted to me, a bready heartiness about it. in the taste the yeast does come out a bit, slight pear to it, but not estery in the typical sense, some protein type density to the wheat which is cool. almost a rye note too, there is nuance to this, very cereal forward, a slight apple cider thing as it warms, but on the drier side of the spectrum. not quite the german wheat i was expecting, but no doubt a well made beer, great wheat profile and nice high carbonation making it sing. could drink on this indefinitely, as the name indicates...
