In May, the streets of Rome are filled with blooming jasmine and this oenobeer perfectly captures the experience of walking through those streets. With 44% of Chardonnay grapes, this Imperial Saison offers the aromas of Old World aromatic wines with hints of white pepper and jasmine flowers, yet still in the saison style.

L:. Pours a copper orange with a small white head that stays on top slightly.
S:. Notes of jasmine and white pepper, sweet white wine grapes.
T:. Sweet white wine grapes with a bit of tartness, some white pepper and jasmine. Quite sweet but still drinkable.

wow. just wow. this is among the best beers i have ever had, no joke, right out of the gate too. to talk into a new brewery and have even tolerable beer is a treat in this city, but to be floored like this is not even real, i just couldnt believe this one, a serious beer of the year candidate for me this year! its a chardonnay grape based clean saison that also is brewed with jasmine flowers. its crystal clear and the lightest shade of golden, excited bubbles racing to the surface and a thick creamy white head thats effortless on top, almost defies logic visually, looking amazing in the wine glass they serve it in. the aroma too is just stunning, fresh cut jasmine flowers, sweet and earthy subtle white tea, faint citrus, the obvious chardonnay with its slate minerality and melon, kiwi, and green apple character, as well as a very clean, almost overly refined saison yeast strain which has a little of the french saison vinous character to it, but isnt overly estery or belgian, and stays in the background here more than i am used to in something called a saison, but i appreciate its role. the flavor is just as good as the aroma, with the grapes making this very wine-like, but enough of the grain and yeast to keep it fully beery for me. the fruit is bright, with just a little tannic pop, short of tangy, and with some structure from the grain here too. amazing freshness from the jasmine, so natural, not perfume-esque or forced at all, and gorgeous with the grapes. champagne level carbonation makes it dance and sing, and although its dry on the swallow, its not gone, some floral and grape elements remaining, a reminder of just how epic this was after each sip. hands down my favorite beer in here, and really an unforgettable offering. i hope they keep this one on the menu, its wonderful!
