The sister of our imperial saison Ipse Dixit, the 48% addition of Chardonnay grapes creates a vinous and flinty profile. Definitely meant for a Chardonnay lover.

really exceptional beer, impossibly well refined, and just absolutely delicious. scary drinkable too, so delicate feeling and with an insanely well hidden alcohol strength, this drinks just way too easy for over 8% abv! the chardonnay is awesome in here, both obviously chardonnay, and fully in step with the clean but estery saison yeast, which contributes complimentary notes of pear, apple, and honeysuckle. unfortunately, i had the chardonnay saison with the jasmine flowers in it before i had this one, and i truly felt like the jasmine was missing in this, like it made the other one so complete and original that it almost felt like this was lacking something, which is a foolish thought, but thats what my palate said after falling head over heals in love with that one. the grape is bold in here, i get some tannins from it which show up because of how simple and tidy the yeast is, and i get some cool earthy minerals too, a terroir to this more than any of their others. very light body here, im not even sure i taste or feel any wheat, which i consider a requisite ingredient in saison, but this might just be a pale pils type, its insanely minimal. this one might be the closest to a glass of wine of all the beers i had in here as a result of this grain simplicity, but its also one of the most strikingly well built and executed. the beer in here is incredible, i cant wait to watch these guys evolve! the fact that this was a first batch of this is astounding.
