a wonderful sour here, done in collaboration with shades, another local operation. this has a crazy nose and taste, reminds me of a tropical vacation, heck it almost takes me on one, really flavorful and well proportioned stuff, not too sour to be majorly drinkable, and perfect for the summer. just a little pink hue from the fruit, lots of haze, and a big tall head on it from the tap at the brewery. aroma is pure coconut flesh, raw and sweet and natural, with a little juicy tropical fruit and a clean lacto souring profile, lemony and only moderately acidic it seems, my mouth waters like crazy before i taste it, and really its pretty unique as well. the flavor is just as good as the nose, the guava is more distinct here, less just generic tropical fruit, and it too is very natural, perfect with the coconut and the tartness. so often guava is put in beer with a range of other, more powerful fruits, and its identity is lost. its cool to taste it in relative isolation here. the coconut is dominant, but some wheat in the base beer can also be appreciated, especially in body. maybe a touch light on carbonation, but these flavors lighten it up anyway. overall a really thoughtful and well executed sour, the coconut is amazing in here, and everyone at our table loved this!
