Astral Veil is a fresh, emotive 5% saison brewed with pilsner malt, raw wheat, and toasted wheat. The raw and toasted wheat are from MBS Seed based in Denton, TX. Hand-roasted by Wade fromMBS, the wheat adds a beautiful depth with some nutty and cracker-y notes to the finish.
Astral Veil was dry-hopped with Centennial CGX fresh hops from Crosby Farms, and just a touch of Cashmere. This beer was fermented warm to ensure the yeast fully attenuated and produced the lovely aromas we expect form this yeast.
We get notes of banana, clove, and fresh cut grass. This beer is dry, crushable, and has a gorgeous balanced complexity. Its a lovely pale yellow with a slight haze and has a great spritzy carbonation.

Clean gold pour, finger if off white foam on top. Looks really nice. Nose is yeasty.
Taste brings some sweet herbs, bitey yeast, citrus, light kilned malt, some hay, touch if carmelized malt. Light to medium mouthfeel ( the yeast is working here). Finish is dry with a citrus zest bite. What a great summer sipper.

Where’s the slight funk? Not Saison-y enough. Trends towards a lager.

L-Pours a pale straw colored beer with a solid decently uniformed 1+ finger head.
S- Nice soft phenolic aroma of banana and clove, grain, and wheat. Herbal floral portion as well. I almost get notes of Czech pilsner as well. Some white wine characteristics at the back end.
T-The flavor follows the nose. Nice phenolic notes of clove and banana. Spicy grain. Mild sweetness, and fresh wheat. Slight earthy backbone to this beer as well.
F-Drying mouthfeel with solid carbonation. Heavier side of light bodied.
O-A really solid, drinkable, grainy and phenolic saison by Celestial. Refreshing with an earthy and grainy bite.
