Sobayu is made with both raw buckwheat and craft-malted buckwheat, as well as buckwheat honey. This beer arrived from its 9 month long barrel-aging process with a tangy flavor that compliments the brettanomyces and lactobacillus flavors imparted by the oak barrels.
