Pale gold in color with a fingernail of off white around the rim and covering three quarters of the top. Moderate lacing on the glass. The aroma is of tart green apple. I'm tasting tart green apple and pear. The mouth is moderately carbonated and crisp.

500ml bottle. Poured out a cloudy, golden yellow color with a small, off-white head of bubbly foam. It left sticky trails of lace on the glass. It smelled of grains, toasted caramel, crackers and spices. Nice funky taste with peppery notes and spices. Sweet bready finish.

picked up a bottle of this at the brewery in october, felt like time to bust it out. awesome label on it, almost a mikkeller aesthetic to the art, very visually appealing. the beer pours very pale yellow with some cloudiness to it and plenty of fizz even though the white head is short lived. not quite as alive as i had hoped, but not still either. aroma is quite funky, mature, this certainly seems ready to drink now. bretty and saison-esque at the same time, some farmy funkiness to it, along with a white wine fruitiness, some light earthy grassiness as well, straw and hay and summer vibes, rustic and different, a neat fermentation profile for sure, smells a little tart too, light lemon, a hint of iodine, raw wheat, appealing for sure, if a little less refined than i was planning on. the flavor is great, totally yeast driven, subtle tea and even berry character in here, well established brett, a little lactic twang, and some belgian type esters short of the bubblegum range, but maybe pear and green grape to it, very summery and light, but not quite delicate to me. a little grassy hop bitterness at the end, white wine esters, and some drying funk. its nice beer, still maybe a tad young even with quite a bit of oak on it, but unique and good, a fun one to share with a nice mixed grill on one of the first spring days that has actually felt like spring, a fine food beer, although i bet another six months in the bottle would brighten this up a lot. overall i am stoked on rockwell and am sure they will continue to make cool fermentation forward beer in addition to everything else they already do so well...
