a beautiful lemon verbena saison here, these guys blew my mind. this is simple beer in a lot of ways, a pale orange color to it, a big wheaty base, bone dry, and the herbal verbena which hits on lemon, thyme, and green tea in here, its the ferment where much of the complexity comes from, some light funk to it, but its clean too, no oak and ancient wildness, instead brighter and more peppy, with cultured saison yeast type esters through most of it, a little more rustic on the back end, excellent with the wheat, hints of white wine, pear, and white pepper to it, really adds a lot to this beer, and its awesome with the herbal and fresh lemon verbena. just a trace of late tartness to this, but its not sour beer or anything. there maybe is just a little more body in this than it needs, i can really feel some heft from the wheat, but i like it at the same time, like if this were any more delicate it would all be over a little to fast, so the body serves to sort of make this stay a little longer. the carbonation is exceptional and the dryness at the end is just right. the verbena seems fresh and makes the whole beer very springy. delicious flavors, fun textures, cool ferment, and top quality overall. i am in love with yonder!
