really neat beer here, definitely a style hybrid, basically a cold ipa, but done with their kolsch yeast and in a session type abv range, as rightly an ipa as a kolsch i guess, this is way more hoppy, and more modern hoppy, than any kolsch out there, but the yeast and the ferment in general is a huge part of this, cool fusion, these guys are still killing it. yellow golden and shiny, with a high two inches of white head rising higher than the rim of the glass and staying put. looks real light. the nose is super hoppy though, both green in a good way, fresh, and southern hemisphere to me, white wine all through it, kiwi fruit, pear, melon, green gooseberry, but also juniper and grapey sativa, slightly oily to me, and there is a familiar fruitiness to the kolsch yeast, while it also smells fast and short and crisp and lager-like. the flavor is cool, its never really bitter until the end, its herbal and springy and botanical up front, with key lime and lemon notes too, it really pops, seems brand new, in bloom, and the grain has a european vibe to me, more flavorful than its light color would suggest, crackery, pils-esque, this is where its more and more of a kolsch with the yeast too, but the hops are massive in this for how light the beer is overall, some grassiness too keeping it old world, but these hops are so poppy and bright, more white wine on the finish. carbonation is high, body is light, there is a tasty hoppy linger here, but the whole thing remains refreshing, crisp, very dry. this is more than just a typical cold ipa, i love the yeast having some character, and the hop profile is great. real unique.
