Pours a golden color with a bigger, slowly receeding white head.
The aromas lead with juicy green apples, wet straw and fresh plucked rhubarb among moldy wood and a note of leather. There is also a heavenly, flowery and herbaceous elderflower and honey interplay, enriched by some matured hard cheese.
The mouthfeel on this is light and refreshing with a well balanced carbonation, adding a pleasant, nuanced yet lively effervescence.
Tastes of rhubarb, figs, lighter blood oranges and spicy leaves among apple zest, some caramel and wooden, earthy barnyard. Offers lighter blue cheese then, together with more moldy, toasty wood, ripe apples and a note of caramel, toned down by a well nuanced, mushroom accompanied tartness. Finishes with a gentle rhubarb driven sweetness, elderflower and slowly maturing, sweeter and meatier turning apples, tied together by a herbaceous crispness and strawy barnyard funk.
Fantastic - versatile, intense, complex with a great addition of both apples and rhubarb, making this an unusual and exceptionally well working experiment.
