Pale Beer is a blend of grisettes brewed with Ontario barley, wheat, einkorn, and a smidge of honey. This batch is dry and hoppy with some funk.

Body is a muted, hazy straw colour; highly effervescent, rapidly forming a thick, fluffy, angel-white head with good retention.
Aromas of lemon, whiffs of barnyard and orchard yeasty funk, saison-like, though lighter; lightly tart.
Balance of the palate sits with tart, citrus flavours, accompanied by low funk; off-dry finish, very well attenuated and clean; fine carbonation like Perrier, medium, and medium body, smooth feel; low pale malt flavour, low hop flavour, low bitterness. All in all, not what I expected given the name, but refined and refreshing.
A refreshing, simple but sophisticated choice for summer. Would pair well with chicken, fish - honestly whatever you have for the bbq
