Appearance: One finger of head that laces decently but sadly doesn't last. The body is a cloudy yellow with few signs of carbonation.
Smell: Beautiful mixed hop note to a backing of biscuit malt. Citrus, Grass, Floral and mixed together and presumably the type of hops the beer shares its name with.
Taste: Biscuit malt to start that has a bit of a mineral note reminiscent of English pale ale that serves as the announcer to the star that is the hops. The same notes in the nose, Cirtus, Grass and Floral notes with maybe a slight herbal hint that while strong, aren't overdone.
Mouthfeel: Malt and citrus are the predominant notes in the aftertaste, as the carbonation helps out the entire beer here. The transitioning is great as well, although perhaps not the longest of journeys. It leaves that hint of dryness from the hops that makes you want to drink more.
Drinkability: Medium body, which with that slight dry note works out for it, although it could be a bit more refreshing. Settles down well enough, and while I think it could be watered down to address some of these concerns, I wouldn't. What you'd gain here you'd probably lose in taste.
Final Thoughts: Just a great, well rounded, well done Pale Ale. No bells or whistles, and if you like Mosaic Hops this is probably your jam. This is what a hop focused beer should be, a bouquet with a nice malt wrapper around it, not an airhorn that screams "BITTER" like many an IPA are. Thumbs up.
