an exceptionally good hazy ipa here, my first from single hill, which given the name and location, should be a lock for making unique and delicious hoppy beers. this one is more about the hop profile than any high level of refinement or interesting recipe wrinkles, its just a great mix of hops. galaxy leads the way, idaho 7 as well, and hbc 472, which i am a little less familiar with. the galaxy gives lime leaf and lime zest, the idaho 7 some peach and ripe sweetness, and perhaps even a light berry element comes from the 472, whats there in the nose is also there in the taste, no falloff at all. the base beer is a little fuller bodied, looks quite starchy in the glass, even a little dull to me, but holds its inch of thick white head well. it feels a bit bigger than it is, with all the roundness and some residual sugar combined with some swirling hop oils the stay on the tongue awhile after each sip. peach juice notes in here for sure, canned pineapple, cut flowers, and even papaya, really compelling and good, and a nice showcase of galaxy above anything else. the freshness is maxed out, there is very little bitterness, and no over hopped greenness to it at all. really solid ipa here, new school and distinct from the crowd. nice first impression!
