Liberty Bell 7 is a Foeder-Aged Grisette brewed with Belgian pilsen, pale wheat, and flaked wheat for a light and airy base. It was then fermented with a mixed culture for about 6 months in one of our American oak foeders. Liberty Bell 7 was also aged over Lemongrass and dry-hopped with Lemondrop hops. The result is a lightly oaked, petite saison with a blast of lemon zest, that balances out with a refreshingly funky finish.
On July 21, 1961, Mercury- Redstone 4, nicknamed the Liberty Bell 7, lifted off and became the second United States human spaceflight. The spaceflight was piloted by Virgil "Gus" Grissom.

A: Pours with some haze, a bright yellow color. A dense white head rises to over two fingers. This lasts for a while, with some lace left behind.
S: Musty basement like funk lasts throughout. With lemon rind up front and center. Perfume like and floral hops. Peppery spice mixes in there as well. The nose is huge and very satisfying.
T: Again, the musty basement like yeast and peppery spice. Lemon rind, and almost lemon drop candy like. A puckering acidic bite and citrus sourness. Floral hops with just enough bitterness, then black pepper lingers on after a while. Everything is really well balanced here, just as you get use to one aspect, another sensation takes its places. Really impressive.
M/O: A light to medium body. Lovely effervescent, lively, and refreshing carbonation. This is incredibly enjoyable. The 750 ml bottle is gone in no time.
This is all around top notch. Delicate, balanced, and complex all at the same time. Exactly what I look for in an American example of a Saison. Another highly recommended offering from True Anomaly.

Serving: 750 ml bottle, picked up at the brewery on 15-Jul-20; poured into a Spiegelau beer tulip glass. Starts clear, bright, pale golden yellow, clouding up with sediment towards the end of the bottle. Kicks up a frothy head of white foam, leaving spotty lace.
Smell: Intense aroma of barnyard funk, lemon zest, floral hops, oak and spicy yeast.
Taste: Crisply tart with citrus, white wine vinegar and lactic notes. Subtler spice, lemongrass and gentle kiss of hoppy bitterness.
Mouthfeel: Light body and refreshing, effervescent carbonation.
Overall: Another fantastically funky offering from True Anomaly.
