This beer is a blend or wort (source undisclosed) and wild yeast from the micro climate of the east side of Seneca Lake, which provides a terroir unique to this bendery, and each batch. The brewer labeled this one, "Barrel aged Saison with estate grapes: Concord, Niagara, & Vincent."

A two-inch, fluffy white head is creamy and holds for about two minutes before suddenly dropping to a quarter of an inch, leaving no lace. The beer is gem clear and rich golden amber with swarms of tiny bubbles racing about within a Pretentious Beer Glass Company cider glass.
Earthy funk dominates the aroma, similar to an extremely dry white wine. Surprisingly, there are notes of chocolate. Sweet grapes are also present, particularly against floral notes as it warms.
Sourness is strong up front, like a beneficent ruler. Light sweetness follows, then later in the finish one will find faint bitterness. The finish has a ton of oak, some grapes and some apples. The finish is not particularly long, though it is very dry with only a touch of relief from sweetness. WOW! let this one warm to room temperature as it significantly improves.
The medium body has a woolly texture. The alcohol is here, perhaps at the level one might expect from six percent, though no abv is listed. Carbonation is super fine and coats the tongue with each sip.
This is a sipping beer, clearly inspired by wine culture. It was a pleasant experience and reminiscent of its Belgian cousins. I can easily see pairing this with fatty, soft cheese. I tried it in the crisp air during Thanksgiving weekend.
