80kg of Water Valley whole hops in the hot side (Saaz 60min, Chinook & Cascade at whirlpool) and 20kg of YCH Cryo Fresh Simcoe

Calling all hop-heads! In a first for The Establishment, we procured nearly 100kg of fresh hops for every step of the brew, and thanks to our friends at Water Valley Hops, the vast majority of those were picked the morning they were used! Expect the vibrancy of dank cannabis and zesty citrus, with notes of wildflowers and stone fruit, the final form coming through bright, clean, crisp, and dry. This beer is incredibly seasonal, and because it’s 100% fresh, only possible during harvest, so do not miss this loving homage to the humble hop!

Fresh hop West Coast Pilsner packaged on October 20, 2025.
Pours a clear pale straw yellow colour with two fingers of foamy white head with decent lacing.
Nose on the head is distinctly herbal and green - very much notes of rubbing a hop off the bine - dank, grassy, a bit of citrus and some sweaty onion.
Grassy, green, and herbal on the palate - slightly floral with lemony citrus and a moderate spicy, weedy bitterness.
Crisp and bright light mouthfeel with persistent green herbaceous note that lingers. Enjoyable though pushing to a bit much on the herbal hit.
April 16/2026 Revisit 6 months later (aged fresh hop??) but I liked this a lot more now - piney, lemony, dank and bittersweet - deserves more like a 4.15-4.2 score.
