Description from Differential = I must preface this by saying that this is a beer and not sake in any way. With that being said though this is a stellar beer. Light body and a crispy clean finish you might almost think this is a lager, but the curveball that the inclusion of koji and fermenting using sake yeast provide a funky almost saison note that is very interesting.
