‘Four’ stacks layers of funkiness, grassy meadows, and fresh cherries atop a low pH, creamy saison base. We get notes of orange blossom honey and a subdued mixed berry finish with a faint hint of oak.
Fermented with an ale yeast harvested from a honeycomb and a single brettanomyces strain, then conditioned for 7 months in red wine barrels, re-fermented with cherries and a few blackberries for color, and dryhopped with Callista and Hallertau Blanc hops before bottling. Truly, this is the work we love
