Phase Three Brewing Company

We let our lead cellarman and brewer, Adam, have at it. His recipe incorporates a high protein mash, comprised of Belgian 2-row malt, raw wheat, a bit of Munich malt and just a dash of rye. Fermented extremely dry with Omega Yeast's Saisonstein which holds DNA from both the classic Belgian and French saison strains.

Bubblegum, white pepper, stone fruit and a slightly tart character with a distinct graininess. Unfiltered and a beautiful way to celebrate the end of summer and welcome in the cooler days of fall with a 6.8% beer.
