Last year we had a fun idea: to create a big imperial Oktoberfest to age in whiskey casks. A marriage of two of the biggest passions we have for beers at Phase Three - lagers and barrel-aging.

We used the exact same recipe we use for our standard Oktoberfest, but increased the original gravity (OG) and fermented with the same German lager yeast to get a whopping 15% ABV (we couldn’t believe the yeast got it that high!). After primary fermentation, we aged it in Rabbit Hole bourbon casks for a year. The base beer holds all the toasty, malty character that mingles with the well integrated fresh spice character from the whiskey and charr notes from the casks. A fun way to end the night after having a few half liters of P3 Oktoberfest and a welcomed addition to our lager program AND barrel program - a lighter barrel-aged beer from us, but a bigger lager from us.

Tasted in a flute glass from draft at Phase Three Brewing Lake Zurich, IL on October 9, 2022. The barrel aging in bourbon casks gives it toasted malt and spice notes.

Released 9/3/22; drank 9/12/22 @ the Yarchives.

Mostly opaque dull brown/orange appearance.

A slow pour yielded a minimal, noisy khaki head which quickly dissipated; no lace.

Caramel, dill pickle, oak & bourbon heat notes in the nose.

Thick, sticky mouthfeel.

Smoked caramel & dill pickle flavors up front; oak, bourbon & fig notes on the finish.

This has major barleywine vibes; not really an Oktoberfest beer in its current form, but if you like over-the-top barrel aged barleywines, you'll enjoy this. An interesting experiment that they should probably not make a habit of.
