Collaboration with Weldwerks Brewing.
Eunoche! We teamed up with our pals at Weldwerks Brewing to bring their fan fav Starry Noche adjuncts into our huge base imperial stout, aged in a blend of six casks for an average length of 17 months before absolutely blasting it with toasted and raw coconut and finished it off with hazelnut.

Starry Noche on steroids. More of a toasted quality from both the hazelnuts & coconut; straight macaroons on the palate. A little oily, but a great sharpness from the barrel to cut through the overlying sweetness. Great balance. Loads of chocolate on the base.

5.5oz draft pour into a snifter. pours a goopy pitch black with no foam to speak of but rather a splotch or two of mocha brown film here and there. big hazelnut on the nose with the faintest aromas of chocolate and bourbon trying to fight their way through. i get zero coconut on the nose or in the taste. fortunately for me i’m a big hazelnut fan but this is still a bit one note. even as it warms, the base stout and the barrel are hardly noticeable. instead, the hazelnut takes on a fruity, nutty aroma and flavor that borders on peanut and jelly. it has a thick, full mouthfeel. lower level of carbonation. no complaints in that department. this was good, but the adjuncts (or should i say adjunct as it’s all hazelnut) overpowers any barrel presence.

Released 9/24/22; drank 10/5/22 @ the Yarchives.
Midnight black appearance.
A slow pour yielded a weird, dark tan bubbles head (I think it's bubbles of coconut sediment or oil?) that's really off-putting; no lacing, just grainy coconut residue. Not a great looking sight.
Coconut, rich hazelnut & chocolate flavors.
Thick, grainy mouthfeel due to the sediment.
BIG coconut and nice hazelnut & chocolate compliments; no real barrel to speak of, and the booze heat comes out as this warms.
An ugly beer with a rough mouthfeel; perhaps a final filtering process right before bottling could have helped? It tasted good, but taken as a whole there's some problems.

5oz d
raft pour at the source. Black body that pours thick. Glass staining dark stout. No head just black oil in the glass. Smells of light barrel, very chocolate forward, hints of hazelnut. Taste is chocolate forward, hint of barrel, vanilla, and coconut. Long & lingering creamy hazelnut finish that is fantastic. Thick body. Easy drinking because the abv isn't very detectable, but as with most phase three stouts this is very sweet & rich. I only want 5ozs worth of this beer because it is that sweet.
