For Eunoia 16 we decided to forgo adjuncts. 55% of the blend was aged in apple brandy casks to impart subtle apple, spice, and a unique wood profile. The whiskey balances it all out.

Midnight black appearance.
A slow pour yielded almost no dark tan head; no lacing remained.
Dark chocolate, mild wood & faint apple brandy notes in the nose.
Thick, sticky mouthfeel.
Apple brandy, dark chocolate & faint wood flavors. Booze heat emerged as this warmed.
Although the Apple Brandy barrel-aged beer appears to be a small portion of the blend, it really shines here. This is the best Eunoia I've had in some time. It actually tastes like a barrel aged stout & not candy. Nice!
