Troubled Mind is next on the review table. I served at 48 degrees in a tulip glass. On my cross-country road trip in March, I came through Palasides because I-80 in Wyoming was closed. I needed to get beer for my friend. The gentleman waiting at the counter told me this was canned this week. Since I cannot find a date, I will take the guy's word. A dark brown, bubbly, and creamy one-fingered head was created from the pour. Sadly this head did not last long and left no lacing on the glass. I was charting the beer's color around SRM 36 dark brown, nearly black, and opaque. Other than the dismal showing for the beer's head, the appearance is average.
Nosing the glass, I smell chocolate, coffee, tobacco, and raisins. That is an odd start to the beer's nose. Swirling the glass a few more times, I detect caramel, alcohol vapors, char, smoke, and mineral-like earthiness. Rechecking aromas in the Snifter, I did not get much else but a slight floral note (unsure what but flowery) and those all too familiar dark roasty cereal grains.
I first noticed lots of soy sauce, smoke, and char. This first sip had a lot going on, yet the flavors were broken and unpleasant. This breaks my heart; this beer has been kept cold since March. I also detect off-flavors, papery, musty, and a touch of vinegar, making the experience tainted. Other flavors in the beer are dark toasted bread crust, floral notes, caramel, raisins, mineral-like earth, chocolate tobacco, and espresso.
After the first sip and my disappointment ramped up, this beer was too thin for an Imperial stout, my opinion here. The mouthfeel was hot and slightly astringent. The body is medium-plus and has medium carbonation.
I have enjoyed every beer thus far from Palisades; this one falls short. The beet beer was built better than this one. Still, enjoy your brewery, and look forward to another visit.

Poured into a chalice a very nice dark brown/black color, with some pretty nice carbonation, with a pretty nice thick/creamy one-finger tan head, which also leaves a nice medium size island, with some nice sticky lacing behind. The nose is malty, hoppy, with a very nice chocolate/toffee notes, with a very nice dark fruit complex (grapes, cherries, dates, figs, prunes, raisins), with a pretty nice touch of vanilla, licorice. The taste is very nice, malty, hoppy, with some very nice chocolate/toffee notes, with a very nice dark fruit complex (grapes, cherries, dates, figs, prunes, raisins), very nice vanilla sweetness, licorice. Full Body, ABV is hidden pretty nicely, a very nice complex brew/sipper, with a pretty nice dry/bitter finish. Overall, a very tasty brew! Definitely worth checking out.
