I stopped here on my way home from making a run to the Midwest. Palisades Brewing took a huge risk and made a beet beer; for the record, I enjoyed it. I will always stop at breweries trying to push boundaries to create something unique. Using my tulip glass, I served the beer at around 44 degrees. The hard pour produced a frothy, creamy, two-fingered bright white head with excellent retention. The slow dissipation left bits of lacing on the glass. Examining the color, I see golden yellow with straw yellow hues. The beer is mostly clear with some haziness. Overall the appearance is excellent.
Nosing the glass, I smell oranges, lemons, grapefruit, crackers, light malty sweetness, floral esters, and a touch of pine.
The flavors are pine, grapefruit, light malty sweetness, biscuits, floral esters, dank, lemon peels, mandarin oranges, and a pharmaceutical note.
The mouthfeel is slightly astringent. The body is medium, has medium light carbonation, and finishes dry.
The IPA is standard, and the hops are not pushed. This comes across more like a Pale Ale. The malt backbone is less firm than I would prefer. I would give this a 3.75-4

Sez IPA on the can, but it is an NEIPA. Weird shit, they call this an IPA, but more of an NEIPA. To me, it's their best NEIPA to date. They need to get their shit together.
Poured into a Trillium glass a pretty nice cloudy pale yellow color, pretty nice carbonation, with a pretty nice thick/creamy one-finger plus off-white head, which also leaves some pretty nice sticky lacing behind. The nose is pretty nice, hoppy, malty, with a pretty nice citrus complex (orange, tangerine, pineapple, grapefruit, mango, peach, apricot), nice diesel like, kinda. The taste is pretty nice, hoppy, malty, with a pretty nice citrus complex (orange, tangerine, pineapple, grapefruit, mango, peach, apricot), pretty nice diesel like, kinda. Medium body, ABV is hidden very nicely, with a nice dry/bitter finish. Overall, this is a very tasty brew. Orange Julius! MilkShake! Addictive!
