The beer poured a nearly crystal clear, bright golden yellow hue and was topped by a fluffy, finger-tall, bone white crown that quickly fell to a thick, resilient collar. Streaky, spotty lacing trickled down the sides of the glass.
The aroma was really interesting. Smoky notes came through fairly strong but did not overwhelm the base beer. Peat smoke or campfire smoke came to mind. I did not pick up on the wine barrel, the apples or the peaches however. There was a crisp brightness too. Really lemony and tart. Touch of Brett perhaps. Nice dry, powdery yeastiness as well.
The flavor profile was super crisp and tart. Dry up front. Lemon notes came through big time. Lots of tart wheatiness in the center. Bit of bready malt character too. Touch of smokiness on the back end. The beer finished with more lemony tartness and a lingering lemon peel-like quality. Like with the nose, the red wine barrels, the apples and the peaches were all undetectable however.
The mouthfeel was the only somewhat disappointing aspect of the beer. The anticipated crisp, sprightly effervescence indicative of most quality saisons was toned down quite a bit. Moderate carb. Medium bodied.
Design Symmetry is an interesting and unique beer that definitely sets itself apart from other barrel-aged saisons. Unbeknownst to me, Amory’s Tomb makes a number of saisons that earn impressive scores on this site. Moving forward, I will make a point to keep this brewery on my radar.
