We aged a two-year old Méthode Traditionnelle spontaneous beer on two types of Hotchkiss, CO-grown sour cherries, Danube and Montmorency, before blending. The resulting beer has a beautiful cardinal red color with lively carbonation. The acidity is bright and the cherry flavors are reminiscent of a freshly baked cherry tart. The nose is pure sour cherry heaven!

finally getting to drink some bottles from primitive, been way too long, good people behind this operation and some really clever and process intensive stuff, just has been unfortunately hard to track down now that i dont live in colorado, but it was worth the wait, this thing is really neat. gorgeous jewl tone ruby colored beer, backlit looking, not quite clear, short lived white head, but enough carbonation in the beer, i think the acidity kind of breaks it down, so it drinks with a bit of a slow pace, but thats fine, there is a lot to unpack here. the fruit is awesome in the nose, tangy pie cherry vibes, cherry candy and cherry cordial too, and the ferment, which is wild and lambic-esque, although the fruity sweetness covers over some of that, its farmy and bretty as much as it is piquant and mouthwatering, very agreeable, although maybe not quite belgian in terms of authenticity, as i was kind of thinking it might be, but i am not disappointed at all, its lovely. the flavors are similar, lots of cherry on this, even like a deeper cherry, the skins and the pits and the whole thing, tannic, sharp, hints of cranberry, red raspberry, and port wine, and some body even though i dont taste much malt. some definite acidity here, oak, and funk, but its sharper than i can drink a lot of, and it sits a little caustic in the belly. the beauty of this is the high saturation of the cherry, its so fruit forward its incredible, and the funk is cool, wild to me, some natural wine vibes to this too. overall very solid, maybe not quite as distinctive and overtly lambic as anticipated, but real well done. i am excited about primitive, wish i had better access to their stuff!
