Appearance: Pours espresso colored with a thin cap that leaves a murky film; leggy with some dribbles of lace

Smell: Very roasty and boozy, with hints of cinnamon, chocolate and Bourbon

Taste: Strong roast and alcohol tones, up front, with cinnamon and chocolate; just a hint of vanilla emerges, with the Bourbon, through the middle; but the finish is hot and boozy

Mouthfeel: Full bodied with low to moderate carbonation

Overall: Just too hot, unfortunately, and that element overwhelms some of the more subtle flavors

Being a beer named "Kill the Sun", you better be pitch black. Well, once again, this "Horchata" version of Ex Novo's annual solstice offering is just that. Black as sin, and reflective as polished obsidian. Above lies a perfect creamy dark tan foam that leaves a stretched out web from coast to coast, and splashes pinnacles of lacing all around the glass.

The smell, especially referring to the classic Mexican beverage, is simply magical. All the elements are there: a blast if cinnamon, a pinch if vanilla, and hell, somehow this even seems to harness authentic rice milk! Bourbon, chocolate, and pastry dough only amplify and elevate the mouth watering experience.

The flavor does a magnificent job despite the difficult undertaking of conveying those aromas to the taste buds. Much in line with scent, cinnamon still favors vanilla, chocolate and barrel still on the back burner. Overall, this tastes like a chocolate infused cinnamon roll fresh out of the oven, but with a balancing earthy bite restraining it from sweet dominance.

Rich and creamy feel that only benefits from the perceived sweetness. The boozy warmth is well hidden and the barrel influence does dry it out just enough to beg for another sip.

Each year, Ex Novo tinkers with KtS and I encourage them to continue with offerings like this. Is it a pastry stout? Perhaps. But it's got the goods for being well rounded too. Spike this with some smoke or extra toasted grain and this thing is an out of the park grand slam.
