Poured from a bottle (09Jan2020) into a Belgian glass
L: pours a beautiful perfectly clear yellow gold with a moderate fluffy white head. Fades after a couple minutes, leaving a nice bit of chunky lacing. Moderate and steady visible carbonation, great lacing left with each sip too
S: very lovely farmhouse ale aroma, restrained bit of tart mostly getting fruit and slightly earthy notes. Get lemon, bit of peach, apricot. Oak aging showing up nicely here. Know there’s salt added but I’m not picking up a ton of it on the nose - perhaps I’m expecting something more gose-esque, which would be extreme. Get a bit of a hay/grassy note, slight pepper spice as well coming through more as it warms
T: follows the nose very well, excellent full farmhouse flavor with great fruit notes leading. Lighter lemon flesh flavor followed by a mix of peach and apricot on the fruit front. While colder I get a white tea peach tea note, like it. Getting that hay note from the nose with a bit of pepper - more salt coming through, especially as it’s warmed. Nicely rounded flavor overall, imagine that’s the wheat bill and oak aging coming through. Finish is quite long, light lemon flesh and salt character carrying through
F: medium body, medium+ carbonation, certainly refreshing, nicely drying, slightly fuller/rounded feel
O: really excellent saison, living up to elevated expectations. Full flavored, refreshing, great lengthy finish
