Tabula Rasa is made entirely from barley and wheat we regeneratively grow on our farm next to the brewhouse. The water is drawn from a natural source deep below our fields. Fermented with yeast we captured a stone’s throw from the kettle.
A blend of 5 custom malts set the stage for the wild yeast esters to shine. The interplay of layered grains and wild yeast aromatics straddles the fence of honey-drizzled spice cake and toasted biscuit, with bright floral pops. For a fleeting moment, the full body and flavor complexity disguise the bone dry finish.
